My Version:
for a LARGE POT
4 slices crisp drained bacon-chopped (IF YOU ARE VEGAN or don't like bacon-omit)
2 cans of evaporated milk and 1 quart of half and half
1 package full fat cream cheese
1 large can chicken stock (can be substitued for veggie stock if Vegan)
rinse two bunches of leeks well and remove the very top but not the entire green area..set aside
1/2 lb butter
1 cup corn starch slush (1/3 corn starch-add water to make one cup)
White or Yellow potatoes,peeled potatoes,diced
white or black pepper-your choice (I use black because I like the stronger flavor)
two tablespoons minced fresh parsley
pinch salt
1 small clove of garlic

In pot, add butter then garlic, then ,half and half, milk,cream cheese chicken stock and cornstarch mixture..heat slowly
cut roots off leeks and mince and dice into "small coins" add..
use the lower to mid portion of the the green section of leeks to mince and add to soup mixture (don't use the top part as it is too tough)keep heat at a low medium and let simmer..Add potatoes before soup gets TOO hot, as not to shock them by dropping them in scalding liquid..add bacon. Simmer slowly on LOW heat once the potatoes are in. Cooking at a high temp will curdle the milk products...Add pepper prior to serving. *you can omit the pepper but it makes it taste good
add salt
mince parsley and drop on top as garnish
enjoy with HOT CRUSTY BREAD
