New Zealand is gorgeous. The LOTR thing is actually a decent idea because they filmed it in great scenery, but with that said, you don't have to go to the exact sites because most of the country is just beautiful.
North Island, I'd say hit up the spas and mineral water baths. Find a farm show and watch how they shear sheep.
South Island, if you can rent a car and drive - that'd be great. I drove from Christchurch to Queenstown to Milford Sound, stopping along the way. Great scenery, great countryside. Totally worth catching the boat tours around the lakes and whatnot. Gorgeous.
