You don't cut the stems until the garlic is dry!...yikes..

First of all in the growing stage it will produce a hard stem in the middle-that my start to curl. This needs to be pinched off at the bottom so the bulb can continue growing..the garlic will be ready for picking when the leaves start to wilt and turn brownish or yellowish..don't pick till then. Once picked-give the bulb a quick rinse and allow to hang to dry. Don't remove the stem until the garlic is COMPLETELY DRY. It's a long process.
