Maybe I am just a dumba** but I've only been able to capture the dang thing once, lol

A reasonable strategy for me so far has been to make the cat waste moves whenever possible. You do this by tempting the cat into exits that look good but aren't. So if you have 101 don't fill the zero in. Build above so that the cat goes to zero. Then the cat has to back it's way out.

Horizontal or diagonal walls:
Try building your walls every other block; in the beginning, maybe every fourth block. Don't fill in the gap until the cat is right there and even then don't fill the gap. Fill one of the two next to the gap outside of the wall. The cat will usually go for your gap and then fill the other one. It'll jump back and you'll be in a good position to either keep building or fill another next to a gap. The more moves the cat makes the more likely it is to make a mistake.
Don't fill the adjacent gap until you really need to. It makes the cat zig zag and thus move more slowly.
