I had some gouda cheese in the fridge that I bought previously to have with my merlot. I took it out today and tried pairing it with a Pilsner. It's great!! The rich and pungent flavor of the gouda somehow balances well with the bitterness of the beer. The carbonation even seems to lighten the heaviness of the cheese making a nice palatable pairing. I'll have to experiment more often with other cheeses and beers.

Brie and a light wine or a Champagne/California Sparkling. The Brie tastes like a yummy butter.
Brie is a soft cheese, so get it double churned for maximum flavor and have it on a baggette of your choice (we like sourdough).

Cheese with beer! What a novel idea. It's amazing that nobody has thought about pairing beer with pizza before. Oh, wait....

simply ming did a podcast about that. it's pretty obvious as to what kinds of cheese with what kind of beer. (strong&strong, light&light).
