Has anybody used Google apps for their domain/business? I'm considering it purely for the functionality of the Gmail interface. My question is, will it let you use your own [email protected] address with the gmail interface? Or do you need to use a gmail.com address for your email?

I think it lets you still use your domain email address with the gmail interface.

Yes! I have set up a couple of small businesses in this manner.

another quick question:

I'm not sure what Google Apps for Business does. Is it simply a suite of applications or is it an actual hosting service? Let's say I already have a hosting service to host my domain. Will signing up for Google Apps for my domain just give me some nice tools or will it completely switch my hosting service?

It will just give you some nice tools...

Is there a significant difference between this and simply setting up my gmail to send/receive emails from my domain through POP3?

If you do this with a regular GMail account, it'll work fine for receiving mail. Whenever you reply, the return message will come from (your GMail address) "on behalf of" (your domain address) if the receiver uses Outlook or Outlook Express:
