Depending upon what I am doing on what machine, anything from Notepad to Notepad++ to Wordpad to MSWord to Lotus Symphony (http://newsandtips.carputers.net/2008/06/29/ibm-lotus-symphony-v-10-released/) to Open Office (http://newsandtips.carputers.net/2008/10/18/openofficeorg-30-released/) to TextMaker for Windows (Softmaker Office 2006)... (http://newsandtips.carputers.net/2008/07/25/softmaker-office-2006/)

I also use gedit, I forgot to put it up there. I like how many syntax highlighting options it has. Quick and simple. Not as full featured as emacs or Vi(m) though.

I use Google Docs for most casual notetaking or spreadsheet tasks, since I can look them up anywhere. But for anything remotely official/important I'll use MS Word. I'm curious to try others such as Open Office which seems to be getting a lot of press recently.

Ultraedit
Super cheap, can handle GB+ file sizes, supports coding and attaching to compilers, and has awesome column based editing.
Also has excellent macro abilities.

That's what I use too... except I use the Pro version of NoteTab.
