What recipes does everyone have that tastes better as a leftover?
Bonus if its healthy and/or gluten free.

A lot of cold bean salads are better the second day.
I think leftover spaghetti can be better the second day.

They are a lot of work to make but I always think Tamales taste better reheated. Something about the firmer texture I guess. My favorite recipe is from Rick Bayless.

I really dig zacharys pizza reheated. It makes the crust a little bit softer....yum.

I made jambalaya a few days ago and it was better reheated except for the sausage as it got kinda dried out. I think I need to use a different type of rice. Mine was all sticky.

You could do a veggie chili that would be relatively healthy.
Chili, Mac and Cheese and Lasagna are the best three I can think of to satisfy these requirements.
