It's been a long time since I used mIRC (college). I was thinking of getting back into it. What server type should I login to? (EFNET, STAR, UNDERNET, DALNET, IRCNET, Others...)

irc.webmaster.com is all you need :D. . . *cough join cough Got|Apex? cough*

But it really depends on what *ahem* you planning to do. . .
