its easy to do in OS X.
Install tinkertool
enable the viewing of hidden files and folders in tinkertool
relaunch finder in tinker tool
goto ipod:iPod_Control:Music:
listed in this directory are all of the folders in which your music is stored. Simply drag and drop the music from the ipod to wherever you want.
Copying this way will allow you to copy at speeds faster than all of the applescripts that are avaialble. When done copying files, you can rehide the files and folders in tinkertool
