I have been looking at a bunch of the higher end mobos and it appears that almost all of them now come with onboard sound. Am I correct in the assumption that I can just disable the onboard sound and go with an actual sound card?

I dont understand why all the boards seem to have sound built into them now and I find this especially frustrating since I have a Soundblaster Live 5.1 Platinum from the system i am scrapping and would prefer to just plop that in.

You are correct. They allow you to disable the on-board audio in the bios.

I like the onboard sound. I don't have a soundcard of any sort that supported by XP. The maker of my sound card has gone under a few years back so I doubt there are compatible XP drivers for it.

My onboard sound (Soundstorm) sounds better than my Creative 5.1 plat. when listening to music and gaming. Hell my creative has been relugated to my nix box, because i don't even want to load the drivers into my XP system.

Some mobos use SB Live 5.1 as their onboard sound, so these days onboard sound doesn't necessarily mean cheap crap.
