I think that porterhouse is a combination of two cuts, namely prime rib and t-bone. Maybe not, I dunno perhaps I'm just a dweeb and forgot it. :D I'd fix it but only mods can edit polls....

Tenderloins and Filet Mignon are by far the tastiest of all beef cuts. Each cut of beef has it's own distinct flavor depending on the type of muscle it comes from (which will determine it's structure and how much usage it gets), fat content and the distribution of that fat throughout the meat.
My family used to raise cattle (very small operation - we had usually 3-4 cows/steers) when I was growing up and most of the beef we ate was our own. In hindsight that was probably the best thing about our beef because we didn't inject any drugs, hormones, etc into our steers and they were fed grass/hay/alfalfa/grain 100% of the time. That made for some very tasty steaks! :lick:

Ok, cali people you have to help me on this one. There's this stretch of highway that connects LA to San Fran and it's bloody straight. There's a ranch in the middle of this highway with tons of cows and they have some sort or hotel/restaurant. We ate there once and had their beef and it was amazingly good, better than any beef I've had since it was probably taken from their backyard. Anyone else been there?
Rib eye is my favorite, but I wouldn't turn any of them down!

I love London Broil! They have it at the good dining hall, but it's mad expensive: $3.65 for 3 thin slices. You can buy a whole cut of it to serve maybe 6-8 guys for $12-$16 at the store... guy on cell phone at the gym in T-Mobile commercial: "Honey, I'm going to go eat some red meat with the guys, don't know when I'll be back" ... wife: "You said 'cute' again, didn't you..."
But since nobody's in this college town to help me eat it, it's Tenderloin night tonight :D

You're talking about the Harris Ranch Restaurant. The Harris Ranch slaughteryards are what you saw (and smelled) from I-5. They typically sell their meats through butcher shops and delis, and it is very good. :)

Ribeye for me. A local grocery store here cuts their own and they have the most awesome fresh herford steaks. A good sized ribeye will run about $8 each.
My parent raise beef cattle, so everytime we visit home, they send back a cooler full of meat with us, including about 10-15 lbs of steak. However, they always have the butcher cut them too thin, so they're not the best steaks in the world. My folks are kind of cheap, and they want to get the most meat out of a steer... But hey, when it's free, who's complaining!

i want a cattle.
maybe i'll do that when I get a yard. I'll brand it for fun, and when it gets tender, I'll kill it, eat it and make a leather jacket.

You are correct sir. Actually they sell the meat through Henry's market place. Supposedly its only grain fed. In my opinion its one of the better tasting meats.
That said, I always remember to put our car on recirculate and button it down tighter than a virgins panties, because it smells so bad. On our last trip we took our convertible...unfortunately, its a soft top convertible and it didnt seem to keep all of the smell out. :puke:

We used to raise Black Angus cows and steers. My parents sold our last 2 cows off when my brother and I moved away for school because they didn't have enough time to crae for them. We typically had 2-3 cows that we would have artificially inseminated so that they would calving at about the same time in the spring. If we got a female, we would usually sell her after she was year old. If we got a male, we'd make him a steer (the rubber band method - no rocky mountain oysters for me :2far: ) and grow him for 12-18 months and then we'd slaughter him. Typically we had 1-2 acres per cow/steer and we needed to have plenty of alfalfa and grain for them to eat during the winter. Cows will eat anything from your kitchen. If we had any spoiled fruit or bread - they would all get excited when they saw it. To us it was bad food - they saw it as a treat.
As for branding our cows, our brand was the following: "This cow/steer belongs to [insert full name here]. If you find him/her, please call (916)XXX-XXXX. Thanks!" Our cows and calves always got really freaked out whenever branding day came around every spring. I always wondered how they figured out which day it was (maybe they saw the branding iron - can't be sure on that though).

With regards to my earlier post about how my family used to raise our own beef, I actually prefer fish to meat. Albacore, Bluefin, Yellowfin, Salmon, Trout (native - not stock), Mahi Mahi and swordfish are among my favorites of all. My parents are still big meat-eaters, but I would rather have salmon or ahi tuna any day.

Thank you for your concern, but I am VERY aware of the toxins to be found in particular varieties of fish. I have to limit my consumption of certain fish because of Hg (though I'll probably get more Hg poisoning from my Amalgam fillings than from fish)

i'll be a bastard because, hey, why not. is Prime Rib really a steak? I think of it more as a roast since you carve it, you don't cook it as the slab you get on the plate. but my definition may be wrong. i love it anyway.

oooh .. I could definitely go for some Harris Ranch meat right now. Much better compared to the stuff the restaurants serve around here.
