My husband's birthday is coming up, and he wants a carrot birthday cake. No problem, really, but dear old Grandma's recipe is, well, dry. Do you have a recipe for a super moist carrot cake I can make for my sweetie's birthday?

add lots more water to your grandma's recipe ==> super moist

You'd have to add the water after baking it. Adding it before wouldn't work out.

Dear Kim,
Granny would be proud of this recipe-and it makes a NICE heavy cake that's bound to keep any Grandma or hubby regular ;) ..very moist-and will freeze well if you want to double the recipe. I like to make it in round pans and make it a triple layer.
CAKE
2 cups sugar
1 1/2 cups vegetable oil
4 eggs
2 cups all purpose flour
3 tsps baking powder
3 tsps baking soda
1 tsp salt
3 tsps cinnamon
1 tsp nutmeg
1 tbsp vanilla
1 cup chopped pecans(I like to roast mine before chopping)
3 cups grated carrots
1 large jar of babyfood carrots or sweet potatoes (I prefer the potatoes)
1 (20-ounce) can crushed pineapple (drain juice)
and 1 box of raisins, soaked in a simple warm sugar water bath before adding.(drain before adding to cake mix)

FROSTING (I usually double the frosting recipe)
1 cup sugar
2 1/2 tbsps corn starch
8-ounces cream cheese
1/2 stick butter
1 lb powdered sugar
1 tbsp vanilla

Preheat oven to 350 degrees F. Oil and flour four 9-inch cake pans. Set aside. In a large mixing bowl, cream sugar and oil until well blended. Add eggs, one at a time, whipping after each addition. In a separate bowl, combine flour, baking powder, soda, salt and cinnamon and nutmeg. Add, a little at a time, into the egg mixture, blending well. Fold in the vanilla, pecans and grated roasted carrots, babyfood, raisins and pineapple. Once all is well blended, pour evenly into cake pans. Bake 30-40 minutes or until cake tester comes out clean. Remove and allow to cool.
make frosting by combining, sugar and corn starch. Bring to a low boil over medium-high heat, stirring constantly for 5 minutes. Once mixture thickens, remove from heat and allow filling to cool. In the bowl of an electric mixer, combine cream cheese, butter, powdered sugar and vanilla. Blend on low speed until well mixed. beat the icing until smooth..let cake cool before spreading icing-refridgerate until thoroughly chilled.

Dear Zen,
Lay off the Big Macs. They're bound to add a pound or two the even the slimmest of guys..and if that's impossible to do-tell the counter boy at McD's go easy on the pickles and save yourself some calories. you'll be lighter than you were last month I guarentee it!... it really sucks when you drop that "secret sauce" on your fresh out of the dryer favorite chinos doesn't it?. Do yourself a favor and invest in some raw veggies and a big ass bottle of Tide.

If you use applesauce instead of oil, :wavey2: it will be moister. You can even add a little extra if you want.
