with a light vegitarian dish? or maybe a decent pasta?

recipes... some simple.. not too complicated.. and not too expensive ;)

Basically you cook the pasta. Take your serving plate, put some olive oil on it, some garlic, then take the hot pasta and toss it with the oil and garlic. Then take your toppings (Capers, Sun dried tomatoes, Red peppers, cheese, etc) add it to the pasta and toss.

Very simple. Looks good! :D

Eggplant with a tomato sauce is good. Use standard italian spices. Bake it.

Are they ok with cheese? throw some provalone cheese in there too if they eat cheese.

Somtimes when I grill I make veggie kabobs for my old lady since she's a vegetarian. That's extremely simple yet very tasty. You can put tomatoes, mushrooms, onions(or not if you plan on macking her), green peppers, etc. If that's not enough you can turn them into fajitas by trowin' it all in a burrito with some guac and beans. Very very simple.

easy and everyone always loves it:

orzo salad...

cook orzo (rice-shaped pasta... any other small pasta shape will do) run cold water over it to cool it and drain well
coat lightly with olive oil (or any other oil)
dice a bunch of tomatoes, black olives (omit em if you hate em), and feta cheese, toss and serve chill-to-room temp...

proportions are sketchy, do what you like, but i wind up about 1/2 the volume being pasta, 35% tomatoes, 10% cheese (strong flavor, goes a long way) and 5% olives (cuz i don't like em much)

gear's is good... i like just spaghetti, olive oil, garlic, red pepper flakes, and parmesan or reggiano

you'd think as a vegetarian i could give you some advice here but people have already suggested really good stuff.....

i definitely like the pasta ideas suggested by welfare and gear. you can also cut up some green/red peppers, onions, mushrooms, olives, etc and sautee them in olive oil. artichoke hearts are a nice touch, but avoid the ones that are packed in oil -- imo they tend to be too greasy and the oil destroys the delicate taste. add lots of spices (basil, oregano, chives, garlic, etc). throw them in the pasta.

i also like my psuedo-mexican cooking. take black beans, mix in plenty of salsa, a bunch of sour cream, and some shredded cheese. season with hot sauce and whatever else you like. it should ultimately turn kind of a light-brown color. serve it on top of either rice or tortilla chips, top with a sprinkling of salsa, dollops of sour cream, and diced tomatoes. add some chopped green onions for a nice colorful touch. then sprinkle cheese on top.

another option is to take refried beans (make sure to get the vegetarian variety) and season them up in a similar manner (salsa, etc). i personally like to add artichoke hearts and avocado in too along with cheese. once again, you can serve with chips, sour cream, and cheese, or use as a filling for awesome burritos.

i like stir-fries too, but i would imagine you can figure out how to do that.

make some angel hair pasta..toss some fresh broccoli into a hot skillet with italian salad dressing and some chopped garlic and some grated romano cheese...then add it all together-mixed well..then throw in some yellow squash, and zucchini-chopped into small bits but not cooked..it's good for the crunchies..serve it with garlic bread.

Alfredo Sauce:
1 pint heavy cream
1/2 cup (1 stick) unsalted butter, softened
1 cup freshly grated Parmigiano-Reggiano
Freshly cracked black pepper
Chopped fresh flat-leaf parsley, for garnish

To prepare alfredo sauce: Heat heavy cream over low-medium heat in a deep saute pan. Add butter and whisk gently to melt. Sprinkle in cheese and stir to incorporate. Season with freshly cracked black pepper. In a large stockpot, cook pasta in plenty of boiling salted water for 3 minutes. Quickly drain the pasta and add it to the saute pan, gently toss the noodles to coat in the alfredo. Transfer pasta to a warm serving bowl. Top with more grated cheese and chopped parsley. Serve immediately.

one of my favorite quickies (though not from that site): Thai Tomato Soup and Tempeh Salad

Tempeh Salad

1 block tempeh (http://www.tempeh.info/)
3 tbs sesame oil
2 cloves garlic
mixed salad greens
veggies

cube tempeh to about 3/4 inch cubes. heat oil over medium heat and saute garlic for about 1 minute. add tempeh. shake unitl coated and cook until brown and crisp on all sides shaking occasioinally. serve over mixed greens with whatever vegies you like...i usually use grape tomatos and cukes. whatever dressing you like as well
prep time: 10 minutes

Thai Tomato Soup
1 can condensed tomato soup
1 can coconut milk (lite tastes better to me)
1 scallion
2-3 tablespoons cilantro or to taste
1-3 tsp green curry paste or to taste

make the soup as usual, but subsite 1/2 of the can of water with cocunut milk (so mix the soup with 1/2 can water, 1/2 can milk) finely chop the scalion and cilantro and add that. heat over medium heat and add the green curry paste. stir until paste is disolved and serve garnished with cilantro.

prep time: 10 minutes (which you can do at the same time as the salads)

those are both (obviously) vegan. and as always i would reccomend organic ingrediants ;)
