If you're into camping (which I am decidedly not) I hear Big Sur is nice. Vegas is always a pretty decent spot. If you're into resorts etc., Carmel and Monterey are very relaxing. I don't like palm springs very much, but if you're a golfer...still go to Monterey. Mission Beach is a blast too.

There is a hot spring resort here in the central coast. Called sycamore springs http://www.sycamoresprings.com/

You can get tubs for an hour.. they are great... they are scattered across the hill side.. all private....

Ha! Yes, sycamore springs. I've actually been there, in San Luis Obisbo. They're not that THAT great, but they are relaxing, smell like eggs, and the little huts are PERFECT for sex outdoors. there is nothing that will Eeeevveerrr come close. Especially when you get 2 days of sleep for the price of one. Arrive at midnight, stay up till next morning. Get a room for the following night. Sleep during the day. go out at night. Sleep during the day the next day. Done and done.
