The title says it all
The company’s oil barrier technology benefits more than just the consumer.
“Products using the products are simple for restaurants, school lunch programs and other food service providers to use because they require no changes in cooking procedures or equipment. It’s also good news for food processors who want to boost french fry and battered & breaded product sales by offering healthier alternatives.”
This is red hot off a company's news letter. I hope it's okay to share with the rest of the world. How it works is the chemical restricts the oil to the surface of the food (very little gets in) which results in a crisp texture and all of the flavor. Now you'll be able to taste the potato in french frys.

No, It's not a fat substitute like Olestra. It just keeps the fat off your food. The equivalent would be blotting your french fries with a napkin from the inside :D. Just your every day protien.

.....and then of course reveal to the SEC that I'm trading on insider information.Since the information was public (posted on the WWW by someone who hacked into my account ;)), it would be perfectly legal to invest. Also, since it's patented....it's open to the public. If you really want to find out where to invest, search patents.
With that said, I'm glad no one knows which company it is.

No, if water worked we wouldn't need the product. Water boils off when you deep fry.
