what is the difference between "real" italian ice and just italian ice.
and did it really originate in Italy?

The roman emporers used to send their troops up into the mountains to collect snow-they would bring it back and served over it would be crushed fruits and wine...
Now a days..it's only "REAL" italian ice if it has REAL parts of the fruit-like the real juice, or real lemon bits..I have a great recipe that came from Naples..if you want it-it's easy to make.

i had a rita's gelati today. custard is the best part. the ice used to be much better, they just seem to be getting skimpier and more expensive each year.

Ok you need equal parts of sugar and water (cold water please), then you take one lemon and scrub it good to get all the wax off..then put the ENTIRE LEMON in a blender or food processor, peels, pits and all..get it so its pretty liquidy..then on the stove-BOIL the sugar, the water and the lemon together with a pinch of salt till it comes to a rolling boil..then place it in a bowl and stick it in the fridge-ever so often-go give it a quick fold...DON'T STIR IT..just fold it over on itself...if you let it freeze solid, then place it in the microwave for a few minutes to soften up well enough to eat it...
same recipe-this time, add some of your favorite wine before freezing-
you can also add berries-pureed, or the juice from berries but it has to be fresh.
