I'm looking for a couple of recipes. One for whole wheat pancakes, and the other for a chocolate cake. I found one for the pancakes, but it called for a half cup of butter. I was hoping for something a little more nutritious. As for the cake, I want it to have pudding swirled in it and chocolate chips. I found one with sour cream in it too. Is that weird? And I'd rather use a box mix in it. I guess any simple and yummy recipe would work. I probably can't ask for a nutritious cake recipe, but something with apple sauce instead of oil would be nice.

so what exactly are you asking for here??..recipes? or are you going to use a box mix? whaaaaaaaaa I'm confused...
anyway..for any cake recipe-feel free to go ahead and use olive oil instead of regular oil or butter-and to be honest, using butter is better than margarine-but definately use olive oil...and you can add dry pudding to any cake mix...as long as it's dry-just add 1/3 cup extra liquid if it's a homemade recipe-and 1/4 cup if it's a box mix to which you add the pudding...if you can let me know exactly what you want, I probably have one or 20 for you...as far as the whole wheat pancakes..just substitute 1/2 regular flour for whole wheat...add baking powder, some sugar-preferably brown, eggs, milk and a bit of oil. Don't ever use straight whole wheat for pancakes-they get tough.

I substitute apple sauce for oil in baking often, and I've had good results with using equal amounts.

If you are looking to fancy up a cake mix, look for the cakemix doctor. I bet there is a web page with recipes somewhere.

My mom taught me this pancake recipe when I was a kid and it is wonderful and very simple:

2 eggs
2 cups milk
2 cups flour
2 teaspoons baking powder

It's that simple. Like obby said, you can subsitute half of the regular flour for whole wheat. I have not found a need for sugar or oil/butter in my pancakes.

Also, this recipe takes well to added ingredients. Sometimes I'll put a dab of vanilla, or some cut up apples or whole berries. Really, anything you like can go pretty well in this recipe. When we were kids we'd sometimes get chocolate chips in our pancakes but as an adult it's not as good as I remember it.

If you want I could probably dig up my mom's awesome recipe for chocolate kahlua cake. It has melted hot pockets of chocolate and is made with sour cream and cake mix. Top with some vanilla bean ice cream and close the blinds, because it's party time.

what? no sugar? you need a pinch or two of sugar or the pancakes won't have good flavor. And yes, you need a bit of oil...it's like a binding agent if you are using whole wheat-I was taught that if you have to combine two different flours-(whole wheat/white/rye/etc) you need some sort of a binding agent because regular flour is much lighter than the dark flours such as whole wheat..the pancakes will be clumpy otherwise..

I can remember one time when my boys were still young (around 12) they had 4 of my nephews overnight for a camp out..they wanted pancakes for breakfast, so before mass I made them blueberry, strawberry banana, and for one smart ass kid who wanted them desperately-marshmallow pancakes..well, mr. smarty pants got all the way to church, and decided to puke up the marshmallow pancakes-all over the new carpet in the side entrance...the stain is still there to this day..lol..
(he never ate another marshmallow again after that)

i've been using tha good eats alton brown mix,

6 cups all-purpose flour
1 1/2 teaspoons baking soda (check expiration date first)
3 teaspoons baking powder
1 tablespoon kosher salt
2 tablespoons sugar

Combine all of the ingredients in a lidded container. Shake to mix.

Use the mix within 3 months.

"INSTANT" PANCAKES:
2 eggs, separated
2 cups buttermilk
4 tablespoons melted butter
2 cups "Instant" Pancake Mix, recipe above
1 stick butter, for greasing the pan
2 cups fresh fruit such as blueberries, if desired

Heat an electric griddle or frying pan to 350 degrees F. Heat oven to 200 degrees F.

Whisk together the egg whites and the buttermilk in a small bowl. In another bowl, whisk the egg yolks with the melted butter.

Combine the buttermilk mixture with the egg yolk mixture in a large mixing bowl and whisk together until thoroughly combined. Pour the liquid ingredients on top of the pancake mix. Using a whisk, mix the batter just enough to bring it together. Don't try to work all the lumps out.

Check to see that the griddle is hot by placing a few drops of water onto to the griddle. The griddle is ready if the water dances across the surface.

Lightly butter the griddle. Wipe off thoroughly with a paper towel. (No butter should be visible.)

Gently ladle the pancake batter onto the griddle and sprinkle on fruit if desired. When bubbles begin to set around the edges of the pancake and the griddle-side of the cake is golden, gently flip the pancakes. Continue to cook 2 to 3 minutes or until the pancake is set.

Serve immediately or remove to a towel-lined baking sheet and cover with a towel. Hold in a warm place for 20 to 30 minutes.

Yield: 12 pancakes

I like my pancakes smothered in butter with chocolate chips in them. MMMMMM must go make pancakes now.

Ok, I've been making cakes for parties/selling for a long time...about 8 years. **Oh MAN, I'm gettin' old** anyway... the gal who trained me told me one very helpful hint. Go buy Duncan Hines! Use the pound cake recipe on the back. You just alter the oil, eggs, and add a pudding mix. Simple. Easy. It has gotten raves from parties I've served and I'm kinda embarrassed that it's just a box mix. (I even won a $500 baking prize from hubby's work w/ this recipe for a chocolate cake from D.H.)

I also have a great recipe for buttermilk pancakes. Just make sure the b. milk is fresh and so is the b. powder. Here goes:

1 3/4 cups all purpose flour
1 tsp. double acting baking powder
1 tsp. baking soda
1/2 tsp. salt
2 cups buttermilk
1/2 cup salad oil (I like X-virgin olive oil)
2 eggs

Prepare griddle/waffle iron.
Combine dry ingredients together and mix with whisk.
Combine wet ingredients together and mix with whisk.
Combine dry and wet mixtures together; mix well.
You know what to do next ...!

One of my favorite chocolate cake recipes in on the container of the Ghiradelli's cocoa. Give it a try. :-)

Oh, now that WOULD be a good one. I have found a recipe which is very near the Gharidelli boxed mix. If you'd like it just let me know. It is so very simple. You can make the dry mix ahead of time, keep it in a jar and just add the wet ingredients when you want a major chocolate fix.

I don't want to crowd space and post an unwanted recipe, so if you want the recipe just say so.

Chocolate Kahlua Cake

1 pkg Chocolate fudge cake mix "with pudding"
16oz Sour Cream
12oz chocolate chips
1/4 cup oil
2 eggs
1/2 cup kahlua


Pre-heat oven to 350
Mix all ingredients in bowl. Beat 4 minutes.
Pour into greased and floured bundt pan.
Bake in middle of oven at 350 for 50-55 minutes.

Let cool at least 15 minutes before turning upright.

Serve warm with whipped cream or vanilla ice cream.

:munch: The Kahlua cake was definitely awesome. My family and some friends greatly enjoyed it. And yes, it MUST be served warm w/ vanilla ice cream. I think the only thing I would change, um add, is a ganache icing. It was a little bare on top so I dusted it with powdered sugar. (I only recommend ganache for those who are true chocoholics. The richness can really send you over the edge.)

You can also nuke a piece for 15 seconds or so to re-melt the chocolate chips and it's almost as good.

Yep. That's exactly what I had to do this evening. My guests arrived to dessert a little late. A little bit of a scramble to accommodate 10 people eating hot dessert, but we did it.

The Rock's Famous ROck-Bottom Panecakes

1 3/4 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salf
1 egg, beaten
1 cup milk
1 tablespoon cooking oil
2 bananas (optional)

1. In a large bowl, stir together the flour, sugar, baking powder, and salt

2. In a separate bowl, combine the egg, milk, and oil. Add this all at once to the flour mixture, stirring until blended but still slightly lumpy

3. For a stndard-size pancake, pour about 1/4 cup o the batter onto a hot, lightly greased griddle or a heavy skillet. For a dollar-sized pancake, use only about one tablespoon.

4. Cook the pancake until golden brown, flipping them over when they have a bubbly surface and slightly dry edges.

5. To make The Rock's favorite kind of pancake, slice the bananas into 1/4 inch slices and place them in between the layers of the pancakes.

makes six 6-Inch pancakes or 30 dollar-sized pancakes.

I don't know why, but I expected The Rock to use whole wheat in his pancakes. I figured w/ his body building, etc., he'd steer away from white flour. But hey, what do I know, eh? I know the kids will love it because it has banana in it. What a sugar rush w/ the flour and banana. It's worth a try then we'll go to a playground....

I will be making a big breakfast next weekend, and I thought I'd add something my father makes to the list here, since I will be making pancakes and that seems to be the theme of this thread.

(Keep in mind that this is for an occasional big breakfast, when we all gather upstate and any hope of keeping a diet is left home..the breakfast usually also includes eggs to order, sausage, bacon, home fries, hash browns, corn beef hash, bagels, pastrami, ham, etc..)

Okay so onto Dad's recipe. Unfortunatly there are no measurements. Obbie, Kim, and a few others here seem talented so maybe someone will try a few different ways and post results and measurements.


Apple Topping for Pancakes.

Decore apples and slice them (the way youd find them sliced in sangria)
Give them a quick sautee in a pan with 1 stick of butter
Add to the pan about 1 cup of apple cider
some brown sugar
Some maple syrup and then simmer untill you have a nice sauce to go along with the apples.

Spices that are added but can be modified:

Whole cloves (remove before seving...so i suggest you count them)
Cinnamon
Nutmeg
Raisens
Walnuts (i usually opt out on the walnuts)
There might be more but I dont recall


It sounds simple...and it is...but it tastes really good.

:wow: that all sounds good. Take pictures of the food, cause I doubt I'll be able to make it to NYC in a week. :drool: You just can't find a meal like that anywhere. Maybe at an all-you-can-eat breakfast buffet, but you'd sacrifice the quality.

oh im not going all out like we do on family trips upstate...im just doing the pancakes, apple topping, eggs, bagels, and maybe bacon.
