Since the arm *incident* I haven't really had a chance to cook much (in large amounts)...with the holidays coming, and surgery on the spine being unavoidable, I've decided to post my "holiday menu" for all you groovy boys and girls early..because today was the kind of day I'd usually be making pies, and It's depressing as hell not to be able to do it..so If I had to make a meal for you guys (the Italian way-this would be it...enjoy)

GOT|APEX Holiday Menu



Aperitivi
(Dry Martinis, Gin and Tonic, Bloody Mary's, Red Wine)

Panes
Peasant bread served with olive oil,basil and course salt (for dipping)
Whole Wheat Rolls
Garlic Knots

Primi Piatti (Antipasto)
Salami, Mortadella, Bracciole,Pancetta,(all thin sliced)~
Roasted Red Peppers, Varied Olives and Romano Cheese(thin sliced)~ Bruschetta with sun dried
tomatoes,olives, capers, and slivered Proscuitto all sauteed in
Extra Virgin Olive oil.

Ensalada
Fresh Mozzerella (Buffalo), tomato, and Basil, with a light Olive drizzle.
Romaine Lettuce with Thin Siced Romano Cheese, Mandarin Oranges, Purple Onion and a light red wine vinegar dressing

Zoupa
Fagioli or Minestrone

Pasta
Homemade crab and spinach stuff Ravioli with vodka sauce
Or
Cannelloni with Beef and Ricotta Cheese smothered in a classic
Boscaiola (tomatoes,Butter, mushrooms, cheese, olive oil, garlic

Priatto Principale (Main Course-Meat)
Veal Breast stuffed with a lightly seasoned bread stuffing
Prime Rib
Caramel and Cinnamon Glazed Ham
Chicken Parmasean

Frutti Di Mare (Main Course Fish)
Shrimp, Scallops and Lobster broiled as a trio in extra Virgin Olive Oil,Romano cheese, and a hint of oregano
Baked Salmon with creamed dill sauce
Calamari (stuffed)
South African Butter Fish-broiled with a drizzle of Olive Oil and Mint leaves.

Dolce (Desserts directly following dinner)
Fresh Raspberries with Creme
Pears with Balsamic Vinegar
Canoli
Spumoni
Biscotti with Banana Custard
Gelato (lemon)
Tiramisu
Almond Pound cake with Peach Wine sauce and white raisins

Venetian Hour To Follow
(numerous italian deserts)
and
Coffee, Tea, Beer, Wine,Soda, Hot Mulled Cider



This is a typical Holiday Menu around my families homes, and I would like you all to enjoy it as well-so you better start cooking now...

It's my most favorite thing in the world to do..and I've never had one complaint yet :)...
ps..did you ever see those people that uncover the "secret recipes" of places like wendy's, kfc etc...I have a knack (and some pretty serious tastebuds) for doing that same thing...if I taste something, and I like it-I go home and make it-but better :)

It all sounds very good. I don't know what some of it is...but I've got a stomach who doesn't care and a fork who's ready for some action.

I'm in the same predicament as DF -- drool all over the KB. :munch:

Damn, that sounds better than good. For your family's sake (as well as your own) I hope you recover soon.

If you do, let me know when dinner's served. I'd gladly make the trek to the Southern Tier for that (and visit toerh friends in B-town, Elmira and Skaneateles while at it).
