i recently moved out onto my own and it's time for me to start cookin by myself again.
when i was it college, dinner usually meant pasta. quick and simple.
post-college, i'd like to make things simple again but try to make different things. i live like 5 minutes walking to a whole foods if that gives you an idea of what kind of groceries i can buy.
any ideas? please: simple is the key. and i don't have a rice cooker yet. but add in dishes involving rice for future reference.

Easy things that provide leftovers can be great. Tuna casserole, for instance. You get a lot, cheap ingredients, and can have a few meals out of it. Can never go wrong with some ground beef leading to tacos, sloppy joes, burger, whatever. Soup is easy too, just open the can. Depends how gourmet you want to be. I'm guessing you don't want frozen pizza, ramen, and spaghettio's every night. But there are some better frozen entrees that aren't bad.

kimchi fried rice
kimchi chigae
Both are easy. Stir fry the kimchi, then toss in the rice or toss the kimchi into a saucepan pour in some water and sliced choice of meat some fried onions maybe sliced green onions, tofu and whatever you want, boil and eat.

Nachos
Requires:
Salsa (1/2 cup)
Sour Cream and/or Guacamole
1 can refried beans (Rosarita)
Mild Chedar cheese
Peper-Jack Cheese
Tortila chips
microwave safe dinner plate
sauce pan
cheese grater
Grate equal amounts of mild chedar and pepper-jack cheese
Cheese should be mixed together and set aside
Heat 1 can of Rosatita Refried Beans in the sauce pan
Stir in 1/2 cup of your favorite salsa
Remove beans from heat
Place a layer of chip on a microwave safe plate
Spread 1/4 to 1/3 of the cheese over the chips
Place another layer of chips on the plate
Spread remaining cheese over 2nd layer of chips
Spoon 1/2 refried beans salsa mix over chips and cheese
(place the other 1/2 in a covered bowl for the next batch of nachos)
Place in Microwave for 80 seconds on High
Wash the sauce pan and cheese grater or they will get left for a week and get nasty
Remove from microwave and add Sour Cream and/or Guacamole on top
Eat.
Repeat.

BBQ anything (steak, fish, hot dogs, burgers, chicken) is always mm mm delicious...(or go with a Foreman if you don't have access to a BBQ).
I like eating sandwiches so I usually keep a supply of various cold cuts and toppings around (ham, turkey, chicken, salami, lettuce, tomato, mayo, onions, etc)
Angel Hair pasta with some meat sauce, herbs, garlic bread
Chicken Florentine
Fried Rice
Noodles, wonton, dumplings (sometimes I'll prepare homemade wonton and dumplings, but that's usually an activity that takes several hours, so i don't do it too often)
Whenever I want to eat salads or vegetables I usually just grab some baby carrots and celery sticks or those bagged salads at the supermarket. That way I know everything is fresh and I don't need to waste food that just sits in my fridge for weeks on end. Same goes with fruit. I usually stop by the supermarket on the way home once a week to get some apples, bananas and yogurt.
I used to be more adventurous with cooking back in high school, but I honestly like to keep my meals really simple (10 minute preparation) now, so I just keep the staples around.

Could I get a copy of that for some of my friends. they really need to eat some real food other than when they come to my house.
Obby, I think you should start a recipe of the day/week for those of us needing help or new ideas in the kitchen!
And, I think you should post that list here for all of us! ;)

Nachos

Poor Man's Nachos
Nacho Chips (or Fritos...whichever is cheaper)
1 handful of stolen Taco Bell sauce packets (Mild, Hot, Fire...it's your choice)
Cheese*
Cheese grater
*may substitute ripped up pieces of "single wrap" sandwich cheese
Put chips on plate, add sauce to taste, add cheese. Nuke. Eat. Yum.

I HIGHLY suggest you try the Creamy Chicken & Penne
on a side note...anyone know what water frying is? The Wild rice with pecan shiitake and onion dish says to water fry...in my mind that translates to boiling.

...the tempura batter is meant for a fried steak...and goes with the mushroom basil sauce.

Anyone who has recieved the list already will notice that I recommend NANCE'S chili relish as a staple...I realize it's a product made in New york and I'm not sure if the carry it all over-I suggest ordering it online..I found one place that does ship all the Nance's products (all excellent!)..but they want you to purchase by the case-they do have the relish-12 jars for 20 something dollars-but worth it if you can split the cost and the jars with your friends..here is the link

Water frying is like frying with oil but where you use just enough water to cover the bottom of the pan instead, turn the heat on high-and then let the water cook with the items till it's down till nothing...you don't drown the items, you get the water to a bubbling boil-cover the pot and let it do it's magic..it's the best way for flavors of foods, and added seasonings to infuse with each other..and also, it makes for some nice carmelization at the bottom of the pans when done properly-which can be used for sauces without adding the calories that oil contributes.
