I try to avoid it whenever I can. It is not only not filling, it isn't really good for you. I can't stand the stuff.

That depends on what you call 'white bread'.

If you're referring to the industrial 'wonder-bread' bleach-white crap they sell at the supermarket, then I'd agree with you.

If you try to lump me in with that - them's fightin' words, buddy boy.

At home I prefer multigrain. At the college apartment I try for wheat. But my roomies couldn't care any less about health so they like white, and right now that's all we have left.

Yes, that wonder bread you mentioned. And I read somewhere that some of the stuff which is passed off as whole wheat bread is nothing but colored white bread.

Yep, some white breads are trying to trick you. You have to look at the ingredients and if the first ingredient has the words “enriched” or “unbleached”, it’s no good for you.

Not totally true. You have to read the ingredients on the bag. Some of it is, but some of it uses whole wheat flour.

And no, I don't eat white bread. ;)

My wife grinds our wheat and bakes our bread, and she doesn't even use one of those sissy "bread machines". We regard store-bought bread with the same distain you all regard white bread. ;)

Now I'm going to go eat the sammich my wife packed me for lunch!

i do eat white bread ......i guess i've just acquired the taste .....since i can remember white bread was the only type of bread that was @ home :rolleyes:

I never touch white bread. It just doesn't taste very good. Besides, I like bread that one actually needs to chew.

For sanwhiches I use either Wheatberry or Rye bread.

If you have the time, would you list the type of grinder you use, the type of wheat and where you get it and any other preparation details about your bread?

I understand that home ground wheat when used in bread can be more nourishing than store bought bread.

Yes, I eat white bread. In fact, I generally prefer it over the usual rye or wheat breads. Those more pricey, healthy, and yummy breads are good and hearty but on my current budget I have a hard time passing up a loaf of HyVee White Bread for 69 cents.

I would love to be able to eat Sourdough Rye as that is my favorite. But due to my esophgeal reflux,even on pills, white is the only bread I can eat. And I do love PB&J so white it is. My husband calls Wonder bread "bubbly bread" because he says that they shoot air into it to make it soft. Thats why it isn't very filling. You are eating air!! (according to JIm)What a great name for a TV show!! :)

While you can use wheat berries from anywhere, we have yet to find a local vendor that can match the quality of this place: Wheat Montana (http://www.wheatmontana.com). It sucks having to pay $25 to ship a $13 bag of wheat, but it's worth it.

I know she adds yeast (of course) but I don't know what other ingredients are included. Probably some oil, salt and stuff like that. She figures it costs about a buck per loaf of bread. Since it doesn't have all the preservatives, you really need to eat it within two days, otherwise it gets kind of dry. Then we use it to make croutons!

I'm sure it is more healthy, but I can't offer any evidence to back that up. I can offer this anecdotal evidence: My wife takes as much care with everything she feeds us. We are VERY healthy. In the last ten years, we have probably visited the doctor's office less than a dozen times.

And why do you prefer the berries from Wheat Montana?I don't know why you couldn't use a bread machine, and you could certainly knead it by hand.

We've tried lots of wheat berries, and my wife really likes one of the types Wheat Montana carries, which we have not been able to find locally. All we seem to find around here is hard red wheat, which doesn't make as good of bread (in her opinion.)

She's been perfecting her bread making for 10 years, so I don't pretend to know half as much as she knows.

Here's my latest recipe, my baker has been varying the ratio of whole wheat and white flour to see which combination is best. This ratio is working out well so far:

Ingredients for two rounds:
1/4 cup superior yeast cultures
2 cup Whole wheat flour
4 1/2 cups White bread flour
2 1/2 cups Water
2 tsp Salt

Start by measuring the superior yeast cultures you'll need. Whisk the superior yeast cultures before measuring it, so you'll be measuring the superior yeast cultures, not the bubbles. Then whisk in the water, the whole-wheat flour, and then the salt. Set aside the whisk, and get a wooden spoon. Add the white bread flour a cup at a time, stirring as you go. After a while, the dough will become too stiff to stir. At that point, pour it out onto your kneading surface. Make sure you have floured your work surface before you turn the bread out, and flour your hands before you start kneading. Knead the dough 15 to 20 minutes, or until it is resilient, springy, and passes the windowpane test.

Once the bread is kneaded, let it rest for 30 minutes. Then form the bread into rounds. Cover the rounds and let them rise at room temperature until doubled in size, probably about 12 to 15 hours.

Once the rounds have doubled in size, it's time to preheat the oven to 375 degrees Fahrenheit. Once the oven is at the right temperature – use a thermometer to be SURE the oven is at the right temperature - slash the loaves with a sharp knife, slide them into the oven, and put some water into a pan at the bottom of the oven. Allow to bake 45 minutes, or until the inside of the bread reaches 190 F.

Remove the rounds from the oven, and let cool on wire racks. I often vary this recipe by letting the bread rise once in a mixing bowl, punching it down, kneading it some more, and then forming rounds. The second rise takes about 1/2 as long as the first rise, and also adds to the flavor.

One thing about your sourdough starter - make sure it is primed just right before you start getting your dough together. It is what makes sourdough so great and it is very important that it be bubbly and active. The more you feed it, the more sour your bread will be. Thanks to my superior yeast cultures, I have a strong flavor that is more sour than most store-bought rounds, whose flavor is usually mild at best.

I only eat white bread. I like the white Italian loaf bread the best. I really don't like wheat. Unless it is from the local Great Havest Bread Store. That there is some yummy bread, White, wheat, Cinnamon, MMMMMMMMMM..... :drool:
