Black beans
Ok, so I do not normally like beans. Plain, refried, etc. But we go to Mi Ranchito for mexican and their black beans are SOOOO good. I'm sure they aren't very healthy, cooked with lard or something.
Anyone have a good way to prepare black beans? TIA! ![]()

black beans are awesome!..
I make black beans and rice all the time..it's very simple, for convenience sake by the canned black beans unless you want to spend a night soaking the dried beans..anyway, rinse them well..and drain well..then cook about a cup of rice in about a quart and a half of chicken stock. Don't add the beans until the rice is cooked (all the liquid should absorb)..add some cumin (not alot or it will taste too smokey) and a bit of chili powder..that's it.. or, if you're adventurous, just start with the beans and rice and experiment with adding your own stuff like sausage, smoked ham hock (which is my choice of flavoring if I'm going to actually add meat) different spices.. beans are great for you-and while alot of restaurants cook their beans in lard/fats/greases, it's best to avoid them to get the best nutritional value from them. |

That sounds good, Obby!
I have one too Black Bean & Corn Salad 1/3 fresh lime juice ½ C. olive oil 1 clove garlic minced(yeah...I use a TON more ) 1 tsp. salt 1/8 tsp. cayanne pepper(I use ¼ tsp.) 2(15 oz.) cans black beans; drained & rinsed 1½ C. frozen corn(I use fresh off the cob when I have it) 1 avocado; peeled, pitted, and diced 1 red bell pepper chopped 2 tomatos chopped 6 green onions sliced thin ½ C. fresh cilantro chopped Place the lime juice, olive oil, garlic, salt, & cayanne in a small jar. Cover and shake til well mixed. In a salad bowl combine beans, corn, avocado, red bell pepper, tomatoes, green onions, & cilantro. Toss lime dressing over the top and toss the salad. Let this hang out in the fridge for at least an hour. It needs time to get happy You can use this as a side dish, or serve as a dip with tortilla chips. |

I love beans and rice, and it's such a quick easy busy day dinner. I throw the rice in the rice steamer with some spices, tomoatoes, and the canned beans, throw just a touch of shredded cheese on top when done. Yum!
