Sunday Supper..mmmm BBQ RIBS!

So I go over to my daughters house today because her brother in law was smoking about 10lbs of bbq'd ribs..5 hours on the smoker at 250 degrees with a nice dry sweet mesquite rub and OMG those suckers had meat falling off the bone..topped off with a bit of coleslaw,baked beans (not from a can!) and my contribution of 5 cheese mac and cheese made for a delicious meal..the good company helped too! Yummo.

Obby's 5 cheese Mac and Cheese
you will need the following-all shredded

1 4oz package aged asiago cheese
1 12 oz package extra sharp cheddar cheese (white)
1 12 oz package of monteray jack cheese
1 12 oz package of smoked swiss cheese
1 12 oz package of colby cheese

4 cans of evaporated milk (any brand will do)
3 sticks of butter (salted)
3 cups italian flavored bread crumbs
paprika
salt to taste
pepper to taste
nutmeg
1/2 cup flour
2 lbs elbow macaroni (or small shells)
1 large deep pan!

oven set at 300 degrees

in bowl, mix all the cheeses, the flour, and a few dashes of paprika and nutmeg. Add one can of evaporated milk and stir together in large bowl..this will be thick..
in pan, place DRY UNCOOKED PASTA AND COVER WITH CHEESE MIXTURE..then add the rest of the evaporated milk and cover with 1 stick of cold, grated butter..bake at 300 for 30 minutes, then stir..place back in oven for an additional 30 minutes..after 1 hour, place remaining butter in a frying pan and melt, add bread crumbs..coat crumbs with butter and spread over top of mac and cheese..broil till nice and brown on top..you can also add grated ROMANO cheese to the bread crumbs if you like, but if you do that-you'll want to use unsalted butter..do not serve HOT. Serve slightly hotter than luke warm but not steaming..it tastes much better this way..and don't forget-this makes ALOT. and you can freeze it. (and if you do freeze it-you can reheat it by adding a bit of milk and putting it in the microwave, oven or stovetop.
don't forget to salt and pepper to taste

Obby, every time I read about your weekend dinners, I gain 10 pounds.

Sound great, though.
I'm going to try this Mac and cheese recipe, thanks.
