who's frying their turkey this year?

i've got a question for you if you are frying your turkey. what are you using?

i've decided to give it a shot and need to pick up a deep fryer but am not too sure what will do the job, and what will simply be overkill since i may not fry again next year...

i wanna know what you guys are using or have heard of?

I just saw an informercial sponsored by Butterball for in home fryer for turkeys up to 14 pounds.

you don't want to fry a 14 pound turkey. you'll get a burnt outside and a raw inside.

and it works fine for my needs.

And I watched through a good eats episode of frying. I didn't really follow all his rules, but, gives you good tips on size of bird, brinding....

btw, when i fried my turkey... it was the best turkey I've ever had. =)

I've never done it myself, but I've had several that others have fried. Best turkeys ever.

I think I had heard suggestions of using a regular pot and a camping stove and doing outside for safety in the past.

We're doing 4 turkeys this year.. frying one, smoking one, and 2 in the oven.

We fry outside in something similar to what attgig posted and use peanut oil.

I wonder if a BBQ remote thermometer might do okay for temperature regulation. You could always let smoking oil be your guide

I have a hard time imagining a pot big enough to make that safe though.

I've never done it, but I've helped. A large outdoor crawfish-type pot works the best, I'm told. A buddy of mine lives next door to the owner of "King Kooker," the boiling supply company. I do have a big burner and boiling pot, usually used for crawfish/shrimp/crab boils, and I'm considering doing the turkey thing this year. But my pot may be too big. One of the major expenses is the peanut oil.

Keep it away from kids and pets and put tons of papers down below and around it to soak up some of the splash. Be careful yourself too when putting in the turkey and removing it. If the turkey has moisture on it and you put it into hot oil you will get a massive spray/ splash. I didn't do it so I can't say if you are supposed to put in the turkey before the oil gets too hot or if you are supposed to wait until it is heated (for timing purposes). I did have it at a friend's one year and it was quite good and moist.

Both times I've seen it done the turkey went into hot oil, but the rubbed it down with paper towels first to get off the excess exterior moisture.

And don't fill the pot completely with oil! Leave room for the turkey.

Yeah, I've only seen it done when dropping the turkey into hot oil. IIRC, the turkey doesn't absorb much oil at all, and it traps the moisture inside the turkey quite well. The oil is just to conduct the heat to the turkey. If you put it into cold oil, or even used a cold turkey, it would kind of marinate in oil, which would probably kill the taste/texture/etc.

Also, to all those who will try this this year, it must be done outside, etc. I remember a few years ago when turkey frying became a fad and suppliers in NOLA were exporting the equipment all over the country. There were plenty of news stories of people doing it inside their NYC condos or on balconies or in kitchens, etc. If the burner goes out (and they are very high-flow,) a lot of gas can fill a small room VERY quickly. Also, check out the videos online of turkey friers that catch on fire...it looks like a burning oil well. Wear good elbow-length gloves and safety glasses or preferably goggles. And have someone help you, even if the turkey is small, as knocking over the pot accidentally is really, really bad.

To summerize the alton vid and answer some ??? here

He suggested putting it in when the oil was around 250deg.

Measure how much oil you need by putting the turkey in and filling the pot with water.

He used a ladder, pulley, and cleat to raise and lower the turkey

Avoid the turkey fryer kits
