A typical DV capture ratio is in the 3-5 MB/sec range. Therefore, a 2 minute segment should create a file size of approximately 360 MB - 600 MB range. You're right on target.

You don't have to recaputre it. Just recompile it with a higher compression codec, such as mpeg 3 or 4, quicktime, etc. Play with the bitrates and etc.

do all your editing on the 500 meg file, once your done THEN encode it in mpeg2 (my codec of choice for archiving in good quality)

There are plugins for premiere that allow you to use MPEG2 compression. I haven't seen any for MPEG4 yet (It used to be there, but I'm not sure what happened to it). But if you want the best high-quality compression, check out OpenDivX from Project Mayo.

Yep just need the plugins like jkusar said. I have the ability to compress to mpeg4. I believe angel potion has a proggie that'll install a plug in for ya for free.
