Guavas...what to do with them...

Now that peach season is over...and im tired of peach cobblers (thanks for the suggestions earlier) Guava season has now began. In about two weeks my yard is going to be full of guavas (white crispy asian type guavas). Im going to attempt to make guava sauce (something similar to apple sauce) since the texture and taste are similar. Any other suggestions or ideas?

We used to have guavas when I lived in Florida. My mother used to make guava jelly - it was really good.

How about Guava Liquer

Ingredients:
20 Firm guavas
8 Cups water
1/4Cup fresh limejuice
2 cups White rum
Sugar to taste

Prepare:

Wash and cut guavas.
Put water, lime juice and guavas to
boil in a saucepan and boil until all the
flavour is extracted from guava.
Strain the mixture and sweeten to taste.
Return guava liquid to saucepan and boil
until it begins to thicken. Allow mixture to cool, then add rum and bottle. Let stand for about one week before serving on cracked ice and a little grated nutmeg.

Pasta de guayaba!! My grandpa LOVED that stuff.

In Mexico, we have juice...and we have "aguas," or waters. They're like juice, but more watered down. My aunt used to make a killer agua de guayaba. You blend the guavas--peeled, seeded and diced--with water, really well until it's smooth. Some people don't strain, depends on how "pulpy" you want it. Add sugar to taste, and voila!
