Lunch Ideas

I also need some ideas for lunch. BigJon is home everyday for lunch and I can cook good food for him but we are in a slump. We need cheap ideas that can feed 5 of us. We are sick of Hot Dogs, Peanut Butter and Jelly, Grilled Cheese. We have been eating these for about one month straight. I need some new ideas. They need to be easy so if I lose track of time I can still get it made for him to eat before he leaves to head back. I would like it to be very simple. So what do you eat for lunch?

If your family love eggs, make them egg salad sandwiches or Mac n cheese, It's pretty cheap and yummy!!

maybe english muffin pizzas? (just put on a bit of tomato sauce, cheese, meat, and put it in the toaster ovent - voila!). Soup is always fast. Hot Pockets... umm... microwaveable pot pies... quesadillas... you could even do a stew in a crock pot (cook on the "High" temp).

Why not get some "fresh deli meat" and some good "bakery" style bread and make homemade sub sandwiches.

cook chicken for dinner and throw in a few extra pieces for lunch the next day..nothing like a good piece of cold chicken or some chicken salad for a sandwich..
What about a big salad-add cheese cubes, apples, whatever you have..salads are an awesome vehicle for leftovers..

Grilled chicken is a great idea (george forman it up) and then take the grilled chicken slice it up and toss it in a salad. Just make sure to keep the dressing reasonable, that can kill the salads nutritional specs if it is too fatty.

you can try making fried rice with just eggs, corn, onions, some salt and rice. This can last for a few days. Its not too hard to make. Or if you like soup tomato, green onions and egg soup. umm another really easy noodle dish is just asian noodles or spaghetti noodles, boil it - have a boil with soy sauce, seasame oil, and some black or white (I prefer white pepper) and then put oodles in the boil. After mixing the sauce - you can add some of that hot water from the pot into the boil so you have a noodle soup. If you feel like it you can always crack an egg and have an egg in there, or some greens.

guess, you wont consider KFC style fast foods..(once in a while for a change. With coupons and all, you can get a pretty good deal sometimes)

I love my quesadilla maker. It works really well for a quick lunch. You can put in all different kinds of things for variety. I don't think they are very expensive. You could in make quesadillas in just a regular pan too. Best thing about it is you can put just about anything in them. My favorite is ham and cheese....you also put in leftover chicken or pizza sauce and cheese too. Pretty quick and inexpensive too.

i'm with angl. a bag of rice goes a long way. and it's probably cuz i'm asian, but i can eat rice any given day. go to a local asian market (if you have one) and they often have a lot of produce for super cheap.

If you live near a Trader Joe's, consider picking up a pack of their frozen turkey meatballs. You can heat a couple of them up and throw them over spaghetti, they're yummy. My toddler loves them, and will eat them by themselves as a snack.

Pizza Bagels are always simple to make. If that's not your thing, you can always go with a Bagel Sandwich. These are my personal favorites:

Old school quick eats! Stuff that I would eat when I was growing up. Good ol' fried rice! and Soy sauce and seasame oil noodles. Ahhh yeah!!!

Another easy quick meal is another cold noodle dish - you need spaghetti noodles (drain the cooked noodles), you need peanut butter, some sugar, vinegar, soy sauce, if you want you can add some hot sauce oil to this - mix this together and get it to be some saucy consistency. mix this with the noodles - you will have to use your own judgement on how much noodles vs. the sauce - if you want to add veggies to this you can have thin strips of cucumber and carrots mixed in. This is a very simple dish and fairly cheap to make.
a simple soup noodle dish is also rice bean thread noodles - soak them in cold water - then you can make some pork with green onions meatballs - mix these two together (dice the green onions) add some salt, soy sauce, sesame oil add some black pepper (I prefer white pepper) - mix well - make little meatballs - drop them in a boiling (small) pot of water - this makes the soup - add salt to the water for some taste add the bean threads in - and there is a somewhat of a soup noodle dish. You can substitute the bean thread noodles for chinese noodles wide or thin or spaghetti/angel hair noodles. If you want tomatoes and green onions & pork - chop up the pork (you only need a little bit - it goes a long way) marinate the pork same stuff soy sauce, sesame oil, etc. mix well - dice tomatoes 9or used can ones) dice the green onions - stir fry this - when you get the watery consistency from the tomatoes add hot water and you're done once it comes to a boil. The noodles drain it - season it with some salt ( I like garlic salt or onion salt for this) - mix - then add your soup to the bowl with the noodles - and there's another lunch/dinner.
