Sausage Peppers & Onions

Anyone know of the best sausage, what kind of peppers and onions, and the best way to cook them?

The best kind of sausage to cook is a sweet/hot combo of your favorite italian sausage.(links)..I always freeze mine first then cut it into coins then fry it up in a bit of good olive oil and then drain them. As far as the peppers and onions are concerned-never EVER EVER fry them with the sausage..but combine them at the end. Use Green and red bell peppers, and whatever kind of white sweet onion you can find-cooked separately..both in olive oil with a good dose of salt. At the end of cooking (when the peppers are wilted and some are browned, this is when you can add the peppers and onions and sausage together..RETAIN the oil from both the peppers and the onions and mix together over the peppers sausage and onions..DO NOT USE THE OIL FROM THE SAUSAGE. The best way to eat sausage and peppers is actually at room temp and not hot.And that juice from the peppers and onions is great sopped up with some nice bread.

Great Recipe

Traders joes has some awesome sweet italian sausage for under $3, you get about 5.

They also have the tri-color peppers in the frozen section. Or you can get a pack of orange, yellow and red peppers fresh at the market and jullienne them.

Just like the recipe above, I sautee in olive oil til brown and then let the sausage sit. If u cut right away all the juices will run out.

In the same pan, I sautee a couple cloves of chopped garlic, onions, and spices such as black pepper, red pepper flakes for some heat and maybe cumin (cumin will make it more latin style) til the onions are cooked really well. Add the peppers last, you want them more crunchy than wilted.

In the meantime, I am making some penne or rotini pasta.

Slice sausages, add the pasta and sausages in the pan with the veggies and add some prego. You can also blanch some broccoli and add that in too. I also like to add black olives, but that's just me.

Never use frozen peppers-and never julienne them..REAL Italian style S&P's always have good healthy slices of peppers-because if you cut them too small they turn to mush with skin. I've always found that if you can find a good italian sausage, you don't need garlic or any other spices other than salt. WAIT..DID YOU SAY ADD PREGO? omg why am I even talking to you...*turns back and walks away*
