Potluck ideas

Hey all,

I have to bring in a main dish for a potluck at my company on Friday. Any ideas? Something that tastes good cold would be nice, cuz i only have microwaves for re-heating. and simple to make is a must!!

Crustless Quiche from the frugal gourmet

1/2 c butter
10 eggs
1/2 c flour
1 tsp baking powder
1/4 tsp salt
1 lb large-curd cottage cheese
1 lb jack cheese, shredded

Melt the butter. Whip the eggs until fluffy, and add the flour, baking
powder, salt, cottage cheese, melted butter, and half the jack cheese.*

Place the mixture in a greased 9x13-inch baking dish. Top with remaining
jack cheese. Bake at 400 degrees (F) for 15 minutes. Then reduce the
temperature to 350 degrees and continue to bake for 35 to 40 minutes, or
until the top is lightly browned.

Cool, and cut into squares for serving.
*At this step add any special ingredients you like. (i like asparagus)

Taco Salad.

pre cook 1lb of ground beef and mix with taco seasonings
chop tomatoes
chop lettuce
get some shredded yellow cheddar cheese.
(and black olives if you like-sliced)
1 package cream cheese mixed with taco seasoning
1 container of sour cream for the top of it all
tortilla chips on the bottom-layer all the rest-serve on the side with more tortilla chips. Yummy.

roasted chicken always tastes really really good cold so does pizza for that matter... order a pizza!!!

I can't really think of any cold entrees. Cold soups, cold salads, cold side dishes, sure. But entrees. That's pretty tough.
