i'd recommend taking a class first. not go to a school, but there are places that'll teach like housewives and stuff the basics. my mom saw an ad for one that was like $50.

I knew someone in Cali who was a total sushi-head and wanted to make it at home. He went to a market where they had special sushi-fish available. I imagine its pricier and harder to find than your standard fish. I think you're going to have a tough time finding it in the midwest. I don't think you can just use any fish from the market, unless you like taking chances. and of course you gotta bring it right home (probably bring an ice cooler to keep it in on the drive home) and use it quickly. Sushi fish must be kept cold from the minute its catched up to when its prepared for dinner, andn won't be sushi-fresh for any longer than the day its purchased.

thanks leon!
zen....i'll bet you're right. however, most of the stuff i'd make would be mild, not a ton of fish. tuna, cali rolls, etc. |

Don't you need one of those bamboo mats? You know, to roll up the rolls?
Also, I think you need seaweed. Can you get it in MI? |

i don't mess with raw fish at home, but i do make several types of california rolls... not hard, and you don't need the mat to do it. i'm sure you can find all kinds of instructions in any cookbook that catches your eye at the store. put anything you want in em... all kinds of preserved/pickled/fermented vegetables, fresh veggies, etc. have fun!

i dont know if you live in a pretty decent asian populated area, but if u do, most asian markets sell small portions of fish meat or if u wanna go the sushi/sashimi route, they even sell everything pre-made. just add rice i guess. for a california roll i'm guessing you can just go to any market for that. a lot of places use imitation crab meat. they also sell that at asian markets. or you can use the crab meat that comes in cans. i'm sure u know that the rice isnt ur typical uncle ben's minute rice.
http://www.foodnetwork.com/food/reci..._11564,00.html basic california roll "recipe." if u scroll down it also tells u about sushi rice and spicy tuna rolls. i'm sure you can find better recipes. and i'm pretty sure u knew everything ive said already. |

a friend of mine wanted to do the same thing here in Boston. One of the local community centers had some sushi making class, and then for his bday we bought him a sushi kit with the mat and everything. Getting the right, fresh fish is the hard part though.

oh, and the nori sheets are packaged with a packet of dessicant... same deal as shoeboxes, you get to play "find the poison" and make sure you throw it away before one of your kids finds it

i've made sushi with a friend before. the bamboo mat is a must. also, get a good recipe for cooking the rice. my friend always made the rice before hand but it is not just regular steamed sticky rice. i think my friend put vinegar and sugar in there too. asparagus cooked in a dab of butter with black pepper is great for the inside of a veggie roll.
