    Need Ideas For Pi Day

    I decided to make an impromptu potluck centered around 3.14 (Pi day) at work. What kinds of pies could people bring? I'm thinking along the ideas of a pizza pie, shepards's pie, chicken pot pie, etc. Of course someone is going to bring in dessert like apple pie so less dessert ideas and more like an entree idea.

    do you work with vegatarians? If not I could give you a recipe for Italian Easter Pie also known as pizza rustica or Pizza pienna (which means stuffed pie)..I'll give you the americanized version because to make entirely from scratch might overwhelm you!

    Do this..
    Buy pre-made pizza dough (at least two rounds)
    use a medium to large springform pan and spray with pan spray..
    stretch one of the dough rounds to fill out the bottom and up the sides of the pan
    purchase a large container of skim milk ricotta cheese and drain it well-put in bowl
    beat in 2 eggs into ricotta and set aside
    buy one stick of pepperoni
    one fairly good sized piece of boneless smoked ham (only because proscuitto is too expensive for someone who's never made this before!)
    1lb of sweet Italian sausage (which you bake)
    1lb of skim milk mozzerella
    1lb of smoked provolone cheese
    4 hard boiled eggs are optional but I always use them as my grandmother did

    ..cube up all the ingredients, make sure all grease is drained from the sausage by poking holes in it while baking..put a layer of all the meats and cheeses(and eggs if you are going to use them) in the bottom of the dough pan, then add a layer of ricotta..layer more meat, more ricotta till everything is used up..then cover with a a second round of dough and roll the edges with the bottom dough so no filling can spill out during baking..cut some slashes into the top dough-cover with an egg wash and bake until the top crust is a shiny dark color...
    let cool thoroughly and then chill before removing from pan..serve COLD.

    or..PEANUT BUTTER PIE! MMMMM

    buy one Chocolate pie crust
    get one jar of peanut butter-smooth
    2 bars of cream cheese
    1 1/2 cups powdered sugar
    1 package cook n serve chocolate pudding or use pre-made pudding
    one thing of original coolwhip
    one Hershey bar
    -mix cream cheese, powdered sugar, and 2 cups of peanut butter together-beat well till fluffy.
    place in pie crust
    cover with a layer of shaved Hershey bar
    then add chocolate pudding on top of that..another layer of shaved Chocolate, then the coolwhip and more shaved chocolate.
    you can sprinkle crushed peanuts on top if you like or drizzle with chocolate syrup besides the shaved chocolate..mmmmmmm

    We have several vegetarians and one guy who is Jain (He only eats vegetables that grow above the ground; No carrots but yes to watermelons). I have time...I can just go the pizza pie route but I would like to be creative.

    My friend throws a spring Pie party, and it is literally just dessert. Everyone brings a pie and they slice them into tiny slices and you end up trying like 10-12 pies over the course of the night. And you drink a lot of milk.
    Things range from fruit, to tollhouse, to oreo, to any ice cream pie. Its insane and yet i think its the happiest day of my life.

    Hmmm, Pi day sounds like a great idea. I've got to get with some of the geeks around here and see what we can "stir" up.

    Wow, found a yummy sounding recipe pretty quick on Martha's website.

    Spinach Pie

    This Greek-style dish can be assembled and then frozen for up to three months. When you're ready to bake, it can go straight from the freezer into the oven.
    To assemble the pie, press the spinach mixture into the pans, making even layers; then cover the filling completely with phyllo dough slices.

    Ingredients
    1/2 cup plus 2 tablespoons olive oil
    4 medium onions, chopped
    6 garlic cloves, minced
    Coarse salt and ground pepper
    6 packages frozen chopped spinach, (10 ounces each), thawed and squeezed dry
    1 pound feta cheese, crumbled
    1/2 cup grated Parmesan cheese
    1/2 cup plain dried breadcrumbs
    2 teaspoons dried dill
    8 large eggs, lightly beaten
    8 ounces frozen phyllo sheets, thawed and thinly sliced

    Directions
    1. Make the filling: In a large nonstick skillet, heat 2 tablespoons oil over medium-high heat. Add onions, and cook, stirring occasionally, until translucent, 3 to 5 minutes. Add garlic and 2 teaspoons salt; cook until garlic is tender, 1 to 2 minutes.

    2. Transfer mixture to a large bowl; stir in spinach, feta, Parmesan, breadcrumbs, dill, 2 teaspoons salt, and 1/2 teaspoon pepper. Fold in eggs until combined.

    3. Divide mixture evenly between two 9-inch springform pans or two 9 1/2-inch deep-dish pie plates; press firmly to flatten.

    4. Make the topping: In a large bowl, gently toss sliced phyllo to separate, then toss with remaining 1/2 cup oil until coated.

    5. Divide phyllo between pies, covering the tops evenly and completely. (To freeze, cover pies tightly with plastic wrap, being careful not to flatten topping. Bake within 3 months; do not thaw first.)

    6. Preheat oven to 375 degrees. Bake until heated through and topping is golden brown, about 1 hour 15 minutes for frozen pie (30 minutes for unfrozen pie).

    Serves 12
    Prep: 25 minutes
    Total: 1 hour 45 minutes

    You also need to mention that Phyllo has to be covered with a damp towel when you're not working with it because it WILL dry out almost immediately if not-then it's worthless. shame on martha for not mentioning that!

    My co-workers came up with three other family favorites: Spaghetti Pie, Burrito Pie, and Tamale Pie. The first two are traditional two crust pies and the last one involves only the masa/cornmeal and no actual pie crusts.

    I'll post details if anyone is interested.

    Meh...small showing. Lot of people bailed or had deadlines to meet. We had pizza pie, shepards pie, apple turnovers, pumpkin pie and spinach pie.

    I created a crossword puzzle that was Pi related. All the answers began with 'pi'.
