I had some gouda cheese in the fridge that I bought previously to have with my merlot. I took it out today and tried pairing it with a Pilsner. It's great!! The rich and pungent flavor of the gouda somehow balances well with the bitterness of the beer. The carbonation even seems to lighten the heaviness of the cheese making a nice palatable pairing. I'll have to experiment more often with other cheeses and beers.
