    My wife will use leftover turkey in a number of ways. But this year she did the ham (her mom did the turkey) so we didn't end up with much leftover turkey. But she bought another turkey (a particularly good deal) that she's cooking tonight. I was a bit upset because I didn't get to make a turkey sandwich (one of my favorite ways of dispatching the leftover turkey - on wheat bread, with mayo and cranberry, and plenty of fresh ground pepper).

    We generally eat the leftovers until all the side dishes are eaten up. Then its turkey rice soup, turkey chow mein, and turkey sandwiches.

    Oh, and the neck and organ meat got saved after making stock, chopped up and fed to my cats.

    I cooked a duck this year to try something different. Once you cook off all the fat there was not a large amount of meat on it. About three or four good portions. All dark meat. I still have some sage sausage stuffing left but the duck is all gone.
