Canned Chopped Tomatoes

I gota 6 pound can of chopped tomatoes for pizza a few weeks ago. I opened it last week. Well,I have only used about one pound. I was figuring on freezing it today or tomorrow. I talked to a guy I knew who does catering who told me it cannot be freezed after this time in the refrigerator, but should be freezed immediately after opening the can.

So I asked him how long they are good just in the refirigerator and he said about two weeks.

Sound reasonable?

The only size I can get these tomatoes are 6 pounds, They are not available in grocery stores, but in a restaurant supply store.

Two weeks sounds reasonable. I usually just do a green spot check. One trick you might want to try is to cover the tomatoes in a layer of olive oil to keep the air from oxidizing them. YRMV

i wouldn't trust can tomatoes two weeks even in a fridge. now one week as long as they been covered.

If their fresh currently in the fridge, they should be alright to freeze. But once you take them out you want to use them immediately after they thaw.
