    What to make with a ton of parsley and spinach?

    The GF left for a month-long trip and left me with a two huge bags of random food she had in her fridge. I can figure out what to do with most of the stuff, but not sure what to make with the parsley and spinach. Of course I'm not looking for anything with ONLY parsley and spinach. (I'm a meat lover!!) I'll get more ingredients as needed. I'm just looking for some fresh ideas for a romantic night of cooking for myself.

    Parsley is easy, take what you know you won't use and chop it up, freeze it in a bit of water in icecube trays. Keep in freezer bag in the freezer in a ziploc and use as you need it.

    Spinach pizza - boboli crust, alfredo sauce instead of red sauce, spinach (steam it first) and a bit of parm and mozz cheese

    Salad - with chicken, dried cranberries, almonds and whatever vinagarette that you like

    You can also steam it and freeze it in portion bags for future use in lasagna, or other casseroles and dips.

    Spinach ='s stuffed chicken cutlets.

    Bread chicken cutlets, put spinach, cheese, onions, etc... in center, roll chicken, and keep it closed with an F load of toothpicks.

    Drizzle melted butter on the top of the chicken and throw in the oven.

    Puree and make a health drink?

    If you want to go light, you could make yourself a spinach salad with a nice balsalmic dressing.

    Chop up all the spinach mix it with ground beef . . . season to taste . . . grill 'em . . . put 'em on some buns . . . spinach burgers baby!

    My god. this thread has made me hungry!!! everything sounds amazing guys. BTW, Chrissy, i never knew you could do that with ice cube trays. that's so convenient. thanks guys!!

    spinach will be easy. you can make a spinach salad with warm bacon dressing
    or lasagna rolls with spinach and proscuitto stuffing
    i've done both and both yummy (though proscuitto is a bit pricey... and i never felt like i had enough of it)


    you could also easily just throw spinach in a wok with a bunch of garlic, salt, and pepper, and it can be a perfect complement.


    parsley.... you could use either when baking a bird, stuffing, or with fish.
    baking a bird (chicken, turkey, etc).... throw a bunch of parsley with lemons and such into the cavity. helps add flavor to the bird.
    stuffing, add a couple cups of parsley into the stuffing like...
    fish, you can do something like this
