    Need recipe ideas

    So my friend is having a birthday party where everyone will bring a dish of their own making to the table. I've been designated to make a side-dish (preferably using vegetables). Any suggestions?

    I believe the main course will be something with chicken (if that helps in any way)

    How about you try the traditional String Bean Casserole?

    2 pkgs. frozen string beans or 2 (16 oz.) cans string beans 1 (10 3/4 oz.) can cream of mushroom soup 3/4 c. milk 1 can French fried onions Salt & pepper to taste

    Drain string beans, if canned. Add cream of mushroom soup to string beans. Stir in milk and 1/2 of a can of French fried onions. Place in casserole dish. Cook in 350 degree oven for 25 minutes. Sprinkle remaining 1/2 can of French fried onions and return to oven for 5 minutes.

    Cowboy Beans work nicely with any kind of "bring along" supper..
    recipe can be doubled if need be for a large crowd-

    1 can red kidney beans (dark red)
    1 can light red kidney beans
    1 can great northern white beans
    2 cans pork and beans (campbells)
    1lb hamburger (fried/drained)
    1 large onion (chopped small)
    1/2 lb bacon (fried crispy, then chopped up)
    1 cup brown sugar (dark brown)
    1/2 cup ketchup
    1 teaspoon mustard (I like the dijon type)
    1 pinch of cinnamon if you have it.
    1 sprinkle of salt

    mix all together and bake until bubbly..mmmm who doesnt love baked beans?

    A nice bread round filled with dip works great too...
    cut and remove guts and top from a round rye bread...
    in a separate pan, mix 1/2 bag thawed frozen spinach, 14 oz brick monterery jack cheese, 1 bottle artichoke hearts (chopped up), 1 can cream of mushroom soup, and 1/2 cup of Romano cheese. Add a bit of milk to thin and heat on stove..add to bread bowl when hot-can be nuked..use top and guts of bread for dipping, or buy a separate loaf to cut in cubes.

    It's that time of year for squash..so might I suggest sliced baked acorn squash.
    Buy a few squash, slice them into rounds and peel them remove seeds and guts, layer them in a casserole dish overlapping each other, and dot with butter (about a full stick)..sprinkle with nutmeg and cinnamon and 1 cup of brown sugar mixed with bit of water to make it a thick glaze..you can add maraschino cherries to the top if you like, for some color, add a dash of salt and pepper..bake covered until squash is fork tender...serve HOT-you have glazed squash! mmmmm...can also be used with butternut squash, except you have to cube the squash instead.

    A nice tossed salad is always good..add avocados, pears, apples, olives, purple onion thinly sliced, cukes, tomatoes (remove seeds),and mandarin oranges. Use a very light olive oil and red wine vinegar glaze (add garlic powder and a touch of sweetner(your choice be it sugar, equal etc)...sprinkle with salt just prior to serving to bring out the taste..if you do it too soon it will make the fruit and veggies weep..

    how about a jello mold? everyone loves jello!..add fruit to make it fun..

    or a tray of different breads..boxed mixes are great and time savers and usually taste pretty good.

    how about a pan of italian potatoes?
    wash cut and cube up about 4 medium white potatoes
    wash cut and cube 3 sweet potatoes (or yams whatever you can find)
    place in pan and coat liberally with olive oil..
    add 2 tablespoons of POULTRY SEASONING
    1 teaspoon black pepper
    sprinkle with salt
    add about a teaspoon of rosemary
    bake at 350 till potatoes are fork tender..
    this dish is smokey, yet sweet, definately goes great with chicken and pork as well...the poultry seasoning really brings out the flavor of the potatoes and the rosemary. (I'd go with this recipe myself )

    Candied Yams
    (Mmmmmmmm!!!! Potatoes!!!)

    1 Lg can Sweet potatoes
    2 cups mini marshmallows
    1 Small can pineapple chunks
    1/2 cup brown sugar

    Pour sweet potatoes into a casarole dish. The potatoes should cover the dish.
    Dump in the can of pineapple, juice and all, spread evenly over sweet potatoes.
    Sprinkel brown sugar over sweet potatoes
    Bake at 350 degrees F. for about 30 minutes or until lightly brown
    Spread mini marshmallows over sweet potatoes
    Bake untill marshmallows melt and are lightly brown.

    This recipie usualy serves 1, me! Cause I am a bad person and do not share.

    We call them funeral potatoes around here, since you get 10 or 12 dishes of them when someone dies.
