Trying to do the healthy thing and get rid of my fat *ss. So we are having chicken stir-fry with red & green peppers, celery and onions.Served over
white rice We are cutting out salt completely because my best friend ,10 years younger than me , just had a stroke in Feb. So it kind of scared the sh*t out of us. So I will live vicariously thru you guys and drool over your menus.

Nah..you just need to find some halfway decent sausage, and know the proper procedure for cooking all of the above..If you have a Price Chopper store in your area-they make some pretty darn good sweet sausage links (I like the 3 cheese best) for store bought links (luckily for me, my brothers make their own sausage so I benefit )..You have to make sure that you clean the peppers well (wash off all the wax from the store)..and use SWEET white onions. (no yellow onions-they are too bitter).. I always freeze my sausage beforehand, so that I can cut it into nice even "coins"..just easier than biting into a great big sausage link if you ask me..brown the sausage up in a nice hot skillet with NO grease added. The peppers have to be cooked separate from the onions because they need to be able to cook down and start to get a bit brown on the skin-add good olive oil and a nice dose of sea salt before you cook them..the onions, well, they need to carmelize..so they get cooked in a super hot skillet with some oil and salt and pepper..(high heat please)
Once everything is ready, mix together (including the juices from the peppers and onion pans) and keep it hot till serving..the best part is the "gravy" which is always best sopped up with crusty bread.

I had that same thing for dinner last night.

Tonight was some grilled swordfish topped with pesto and a side of risotto.

i can do broccoli and cauliflower with butter/salt and maybe some fresh grated parmesan cheese, but corn/raw carrots top my list. not too hot on green beans either unless they are french-cut and sauteed in oil olive with almond slivers.

how about raw tomatoes? can you eat those?

Don't get me started on cooking.... nothing on this earth beats Fiji coconut shrimp BBQ on the side of a nice mediterrannean grilled steak with simmered olives, onions, mushrooms, and peppers, topped with grilled asparagus & a chianti-olive oil & herb vinnegarett over it all...

    Thats how I cook.
